In the old mithai bylanes of Varanasi, the sohan roll has always been the sweet you buy for someone you want to impress — a wedding host, a favourite teacher, a relative visiting after years. Ours follows the same recipe our kitchen has used since 2000: roasted besan and ground kaju, worked by hand into paper-thin sheets, layered and rolled while still warm so every slice reveals its signature spiral. It's less sweet than most Banarasi mithai, which is exactly why it's survived 25 years of customers who keep coming back to it for Diwali, Rakhi, and the quiet Tuesday when nothing but a good sweet will do.
