In Banaras, besan ka laddoo is not a dessert so much as a habit of faith. Every Tuesday the lanes leading to Sankat Mochan fill with people carrying it, and generations have grown up knowing exactly what that laddoo should taste like — coarse, deeply roasted, more ghee than sugar, wrapped in newspaper and still warm at the edges. That is the laddoo we make. It is not the smooth, pale, sugary version sold across most of India; ours is the Banarasi one, grainy on the tongue, dark with a long bhunai, and restrained enough that you can eat a second one without regret. We named it for the temple because that is the standard our customers hold it to.
