Malpua is a fried, pancake-style sweet soaked in sugar syrup. Ours sits in our Banarasi Sweets collection. It is a fresh sweet with a short shelf life of 3 days, refrigerated.

The batter is rested overnight — flour, full-cream milk and hand-grated khoya, whisked with green cardamom and a little fennel, then left to ferment slowly so the malpua fries up light instead of dense. Each one is poured by ladle into shallow desi ghee and never spread by hand; a batter of the right consistency spreads on its own into that thin, lace-like rim. It fries on a low flame until the edge turns amber and crisp, then goes straight into warm one-string chashni for a few seconds only — long enough to sweeten it through, short enough to keep the centre soft. Slivered pista and badam go on last, by hand, just before the box is sealed.

Refrigerate on arrival in an airtight container and consume within the shelf life mentioned on the pack. Warm for 20–30 seconds before serving — malpua is at its best just short of hot, when the syrup loosens and the edges crisp up again. Do not freeze, as the syrup separates on thawing.
