About Malpua
Malpua may be the oldest sweet still on an Indian plate — food historians trace it back to apupa, a fried honey-and-grain cake described in ancient texts, made long before khoya or refined sugar existed. Along the Ganga it settled into festival life: offered at temples, made at home for Holi and Sawan, and sold hot off the tawa in the lanes around the ghats on cold winter evenings. Ours is the Banarasi version — thin, frilled at the edge, fragrant with saunf and elaichi, rich with hand-grated khoya, and never so heavily soaked that it loses its bite. It is the sweet our regulars order the week Holi is announced, and the one they send home to family who have moved away from Kashi.
