Anyone who has stood in the Tuesday queue at Sankat Mochan knows the smell before they know the sweet — ghee, burning diyas and tulsi, all at once. The laddoo that comes back from there is handed over in a palm-leaf box with tulsi leaves tucked in beside it, and by the time you reach home the leaves have quietly perfumed the whole box. That is the laddoo people mean when they say Sankatmochan wale besan ke laddoo, and it is a plainer thing than most shops sell: no nuts, no cardamom, no colour. Just coarse besan, ghee and crystalline boora sugar that gives a faint crackle between the teeth. We make it that way because adding anything would make it a different sweet, and Banaras would notice.
