About Sohan Roll
Sohan is an old word in Indian sweetmaking, carried in from Persian, and it has always meant something worked — pulled, folded, layered until the texture changes character entirely. The flaky family of sweets that came from it runs from Punjab to Hyderabad, but the roll is our version: the same fine layers, wound tight around cashew instead of left as a loose slab, so it holds its shape and gives you a spiral you can see. It has been on our counter since the beginning and it has outsold everything else for twenty-five years — partly because it travels, partly because it suits everyone. It is the box that goes out for Diwali to people whose taste you do not know, and it is the one nobody sends back.
