We start by slow-roasting besan in pure desi ghee until it turns a deep golden brown and releases its nutty aroma — rush this step and the roll turns dense instead of flaky. A rich kaju paste, lightly sweetened with sugar syrup and a touch of cardamom, is spread over the roasted besan in thin, even sheets. While still pliable, each sheet is rolled tight by hand, cut into rounds, and finished with a whisper of edible silver varq. The result is a roll with dozens of fine, delicate layers — crisp on the outside, and soft enough to dissolve the moment it meets your tongue.
