Laung is clove, lata is a creeper — and the name describes exactly what you are holding: a folded parcel pinned shut with a single clove. It is thought to have travelled here from Bengal, where it is known as lobongo latika, and it has been made in Banaras for so long that nobody bothers arguing about the origin any more; the city simply claims it. Ask anyone in the lanes off Godowlia what to eat and this is the answer, and it is what visitors carry home in a box on the train. That is precisely why we ship it. Launglata is one of the few sweets that has stayed genuinely local — you will not find it in a Delhi or Mumbai mithai shop — so for most of the country, ordering it is the only way to taste what Banaras eats at Holi.
