Chandrakala means moonlight, and the sweet is named for its shape — a filled crescent, sealed at the rim, the same silhouette every household in this belt knows from gujiya at Holi. The difference is what happens next. Where gujiya stays dry and seasonal, chandrakala goes into syrup and stays on the counter all year, which is how it became the sweet you buy when the occasion has not been planned: an unexpected guest, a result announced, a bus caught home. It belongs to Uttar Pradesh, whatever shops in other cities claim, and its twin sits beside it in every good mithai shop — suryakala, the sun to its moon, round where this one is curved. We have fried both in the same kadhai for twenty-five years.
