About Nutella Bulbul Nest
In Turkish this shape is called bülbül yuvası — nightingale’s nest — because that is exactly what it looks like: a coil of pastry with a hollow at the centre, waiting to be filled. The name travels further than the pastry does. The bulbul has been singing in Urdu and Persian verse for centuries, and any child raised on those couplets in Banaras knows the bird long before they meet the sweet. Traditionally the hollow holds pistachio; ours holds chocolate and hazelnut, which is a liberty and we will not pretend otherwise. But the coil is still rolled by hand, the pastry is still brushed with ghee, and the crunch is still the point. It has become the piece that disappears first when there are children in the house.
