The almond is the older nut here. Long before pistachio became the prestige filling of Ottoman baklava, almond was what the eastern Mediterranean built its layered pastries on — and in India it has been the badam of every festive tray for as long as anyone has been keeping count. The chocolate is frankly new, and we are not going to dress it up as tradition: it arrived in baklava a couple of decades ago, in Istanbul and Dubai workshops chasing a younger palate, and it stayed because it works. Chocolate takes the almond’s slight bitterness and doubles down on it, which stops the whole thing from being merely sweet. Old nut, new note. It is the pyramid we send to people who find pistachio a little too refined.
