Bülbül yuvası — nightingale’s nest — is what Turkish bakers call this coil of pastry with a hollow at its centre, and in Turkey that hollow almost always holds pistachio. Ours holds cashew, and that is not a compromise but a homecoming of sorts. The cashew arrived in India by Portuguese ship five centuries ago and made itself so thoroughly at home that no Indian sweet counter can do without it; kaju katli alone probably outsells every other mithai in the country. Putting it inside a Turkish nest simply lets two long traditions meet on even terms — the pastry craft of Anatolia, the nut that Indian halwais have spent generations learning to handle. It is the baklava we recommend to people who find pistachio too perfumed.
