This one is not ours, and we would rather say so. Mysore Pak was born in the royal kitchens of Mysore in the early twentieth century, where the palace cook is said to have improvised a besan-and-ghee sweet for the Maharaja and, asked what it was called, named it after the city and the paka — the sugar syrup — that made it. It travelled north the way good things do, and by the time we were growing up in Kashi it was already on every festival tray here alongside the peda and the laddoo. There are two schools: the dense fudge-like version, and the porous, honeycombed one that drinks ghee and collapses the moment it meets your tongue. We make the second. It is harder, it uses more ghee, and there is no way to fake it.

Mysore Pak is a race against a few seconds. Fine besan is sieved twice and lightly roasted so the raw edge goes. Sugar is brought to a one-thread syrup, the besan rains in without a single lump, and then the ghee begins — kept hot in a separate pan and poured in ladle by ladle, continuously, while the mixture is stirred without pause. This is the whole craft: add it too fast and the ghee separates and pools, too slow and the mixture tightens into a dense block. Done right, the mass begins to froth and lift, filling with tiny air pockets — that honeycomb is what makes a good Mysore Pak porous rather than heavy. It is poured into a greased tray while still bubbling and scored into squares within about a minute, because once it cools it will shatter instead of cut.

Contains: Milk (ghee). Four ingredients, nothing else — no maida, no vanaspati, no preservative, no artificial colour. Made in a facility that also processes wheat and tree nuts.
Keep in an airtight box in a cool, dry place — this sweet does not want the fridge, where the ghee sets hard and the crumb turns waxy instead of melting. In very hot weather you may briefly refrigerate the box, but bring the pieces back to room temperature for twenty minutes before serving so the texture returns. Handle gently: the porous squares are fragile by design, and a little ghee on the fingers is a sign it was made properly, not a defect.
