Banaras eats kachori for breakfast, and it is not a small thing here — the lanes off Godowlia and Kachori Gali open at dawn to queues, leaf plates, hot sabzi and a jalebi to finish. That kachori is soft, sauced and eaten within minutes of leaving the kadhai. This is its travelling cousin. The khasta kachori is fried dry and fried slow, with a filling that carries no moisture at all, which is precisely why it keeps in a tin for weeks while the breakfast one does not survive the walk home. Made small, it becomes the thing you put out when guests arrive unannounced — the same Banarasi flavours, minus the queue and the leaf plate.
