Papdi has always played a supporting role — the crisp little disc holding up a chaat plate's real stars, buried under yogurt, chutney and sev, gone before you've even registered its own crunch. We thought it deserved a plate of its own. Peri-peri, a heat that entered Indian snacking through chips and fries and never really left, turned out to be the perfect way to give papdi its moment: same familiar crunch, same nostalgia of a Sunday chaat stall, but tossed hot in a sharp, tangy spice blend so it stands entirely on its own.
