Nimki belongs to the tin that comes out the moment the first monsoon rain hits the window — a Bengali and Bihari staple, cut into neat little diamonds, meant for nothing more than tea and unhurried conversation. Every household has its own version, usually built around a pinch of kalonji and not much else, because nimki was never meant to shout. Ours still starts there, but we've given it a brighter finish: a sharp crack of black pepper and a real hit of lemon, tossed on while the diamonds are still warm from the kadhai.
It's the same snack your grandmother's tin held, just wide awake — enough zing to make it moreish on its own, without losing the quiet, flaky crunch that made nimki a classic in the first place.
