Long before namkeen became a nationwide obsession, Gujarat had already perfected it. Gathia belongs to that beloved trio of fafda, khaman and gathia that turns an ordinary Sunday morning into an occasion — a paper cone of hot, golden strands, a cup of masala chai, and no particular hurry to finish either. Made from nothing more than gram flour, a little oil, and a handful of everyday spices, gathia proves that the most memorable snacks are rarely the most complicated ones.
At Sri Annapurna, we didn't want our namkeen shelf to stop at Banaras. India's tea-time table is bigger than any one city, and gathia earned its place on ours simply because it's too good to leave out — made the honest way, in small batches, the way a Gujarati household would insist on.
