About Mathi
Mathi is a Marwari inheritance that the whole north adopted. It gets fried for Diwali, Holi, Teej and Karva Chauth, and then it sits in a steel dabba on top of the almirah for the rest of the month — which is the real point of it. Where our suhali is thin and delicate, mathi is thicker, sturdier, built to be broken in half and used as a spoon for achar. That pairing is not a serving suggestion, it is the whole tradition: a mathi, a spoonful of aam ka achar, and a cup of tea, eaten standing in the kitchen at four in the afternoon. Every Marwari household has an opinion about whose mathi is best. We are content to let ours be judged that way.
