There is a small joke inside this sweet. The katori is the humblest thing on an Indian table — the little steel bowl that holds dal at every meal, the one nobody looks at twice. Making one out of cashew and filling it with dry fruit turns the everyday into the occasion, which is exactly what a mithai counter is for. The form belongs to the showpiece tradition that swept Indian sweet shops a generation ago, when halwais began shaping kaju paste into rolls, cones, paan and bowls for wedding and Diwali trays — sweets that had to look like a gift before anybody tasted them. Ours holds the same cashew barfi our karigars have made for twenty-five years; it simply arrives standing up. It is the piece customers photograph before they eat, and the first one gone from every assorted box we pack.
