There is a small joke inside this sweet. The katori is the humblest thing on an Indian table — the little steel bowl that holds dal at every meal, the one nobody looks at twice. Making one out of cashew and filling it with dry fruit turns the everyday into the occasion, which is exactly what a mithai counter is for. The form belongs to the showpiece tradition that swept Indian sweet shops a generation ago, when halwais began shaping kaju paste into rolls, cones, paan and bowls for wedding and Diwali trays — sweets that had to look like a gift before anybody tasted them. Ours holds the same cashew barfi our karigars have made for twenty-five years; it simply arrives standing up. It is the piece customers photograph before they eat, and the first one gone from every assorted box we pack.

The bowl comes first. Cashew paste is ground fresh and cooked to a one-thread syrup as usual, but pulled slightly softer than a barfi slab so it will take a shape without cracking. While still warm it is portioned and pressed by thumb into small shallow moulds, the rim thinned and evened by hand — too thick and the katori eats heavy, too thin and it collapses in the box. Each one then rests until it holds its own weight. Only afterwards is the filling built: almonds, pistachios, cashew, anjeer and kishmish chopped fine and bound with the barest thread of honey so the pieces cling together instead of scattering. A sliver of pista and hand-beaten vegetarian silver warq finish the top. It is slower work than a cut sweet, which is why they are made in small batches to order.

Keep in an airtight box in a cool, dry place, and store the katoris upright in a single layer — the shaped rim is the delicate part and will not survive being stacked or having a heavier box set on top. Avoid humidity, which softens the dry-fruit filling. Refrigeration is not recommended, as the cold dries the cashew shell and dulls the nuts; if chilled, rest at room temperature for fifteen minutes before serving.
