Anjeer reached India the way most good things did — overland, through Kabul and Kandahar, carried by traders who came down the Grand Trunk Road with sacks of dried fruit from cooler country. In houses like ours it was never treated as a sweet. Figs were soaked in milk overnight and given to children who needed feeding up and to elders who needed strength, and the jar sat on a high shelf because they were expensive and everybody knew it. Putting anjeer inside a cashew roll is simply the halwai’s version of that respect: the fruit is the filling, not a flavour note, and it is left in pieces coarse enough that you can see what you are eating. It is the sweet our customers reach for when the box is going to a house with grandparents in it.

Two things are made separately and then rolled together. Whole anjeer is soaked until it softens, stemmed, and chopped rather than pureed — fig powder is quicker and cheaper, but it gives a filling with no texture and no fruit to bite into. It is cooked down gently with chopped almond and pista until it holds together on its own; the figs bring enough sweetness that the filling needs very little help. The outer sheet is our kaju barfi, ground fresh and cooked to a one-thread syrup, then rolled thin enough to wrap without cracking. The filling is laid in a line, the sheet closed over it into a long rope, and the whole roll turned through finely chopped nuts to give the crust. Only once it has firmed is it cut into rounds, which is why the spiral holds instead of smearing.

Keep in an airtight container in a cool, dry place, away from direct sunlight. The fig centre carries moisture, so a box left open in humid weather will soften the cashew sheet around it — reseal after each serving and the rounds stay firm. Refrigeration is not needed and stiffens the roll; if you have chilled it, rest the pieces at room temperature for fifteen minutes before serving so the fig turns chewy again rather than hard.
