Anjeer reached India the way most good things did — overland, through Kabul and Kandahar, carried by traders who came down the Grand Trunk Road with sacks of dried fruit from cooler country. In houses like ours it was never treated as a sweet. Figs were soaked in milk overnight and given to children who needed feeding up and to elders who needed strength, and the jar sat on a high shelf because they were expensive and everybody knew it. Putting anjeer inside a cashew roll is simply the halwai’s version of that respect: the fruit is the filling, not a flavour note, and it is left in pieces coarse enough that you can see what you are eating. It is the sweet our customers reach for when the box is going to a house with grandparents in it.
