The cashew is not originally ours — it came to India by sea in the sixteenth century, and it was the royal kitchens that first thought to grind it fine, sweeten it and set it in sheets. The name says the rest: barfi, from barf, snow. Somewhere along the way it stopped being a court sweet and became the one India reaches for when the occasion matters and words fall short — the box carried to a first Diwali visit, opened at a wedding, sent to a house where a child has just been born. It is the sweet you give when you want to be certain the giving lands. We have made it at our counter every festive season for twenty-five years, and it is still the box that leaves Varanasi in the largest numbers each October.Customer Reviews
