Gond is not an ingredient you go looking for. It is tree gum — hardened sap collected from the babool, sold in small amber crystals at the kirana shop — and it exists in Indian kitchens for one reason: winter. In houses across this belt the gond ka laddoo is made once the mornings turn cold, packed into a steel dabba on a high shelf, and handed out one a day, usually with milk, usually to whoever the family has decided needs looking after — a new mother, a grandfather, a child who has grown thin. Nobody eats three at a sitting. That restraint is part of the sweet; it is made to be rationed, not devoured, and there is a particular kind of care in being handed one.
