About Doda Barfi
The name gives away the secret. Dodha is sprouted wheat — grain soaked until it germinates, dried and ground — and it is what separates a real doda barfi from the brown-tinted khoya barfi sold under the same name. The sweet belongs to the Malwa belt of Punjab, where it is said to have been worked out in a Sangrur kitchen roughly a century ago and where it is still eaten in winter, in small squares, with a glass of hot milk. It came east with families after Partition and settled comfortably into North Indian sweet shops. We make it the long way because there is no short way: this is a sweet that is cooked in hours, not minutes, and the colour on the finished slab is what milk and sugar do to each other over that time — not what a bottle does to them in a second.
