Roasted chana is the most ordinary thing in this part of India. It is the paper cone bought on a platform, the chabena carried in a cloth bag to the fields, the handful chewed with gud in winter — cheap, filling and entirely unglamorous. What a halwai does with it is take that humble grain and give it ghee, sugar and four hours, until it turns into something you would not think to refuse. That is chana barfi, and it is worth being clear about what it is not: this is not besan barfi. Besan is raw flour; ours starts with whole chana dal, roasted until it cracks, then ground. The difference is the flavour — toasted and faintly savoury under the sweetness, which is exactly why people who claim not to like mithai end up finishing the box.
