If you grew up anywhere between Kanpur and Patna, you met balushahi before you knew its name — in the paper packet handed out after a mundan, in the shaadi ka dabba that arrived a week before the wedding, on the steel plate at every satyanarayan katha. It is the sweet of ordinary ceremony rather than grand occasion, which is exactly why every family has an opinion about it. The South calls it badusha and Bihar knows it as makhan bada; the shape is the same everywhere, a thumb-pressed disc cracked open at the edges. We make ours the way this belt likes it — more flake than syrup, so the crust still gives way with a sound when you bite it.
