Four things are made separately and only meet at the end. Boondi is dropped through a perforated ladle into hot oil in small rounds, the batter coloured with spinach so the green is real; masoor dal is soaked, dried thoroughly and fried until it snaps rather than bends. Cashews go in whole or halved, fried gently and briefly on their own, because they colour far faster than dal and burnt kaju ruins a whole batch. Everything is drained properly and cooled completely — warm namkeen tossed with masala goes soft within a day. Only then is the house spice blend added and the whole thing turned by hand rather than machine, so the cashews stay intact instead of breaking into bits at the bottom of the pack.

Keep in an airtight container in a cool, dry place, away from sunlight and the stove. Namkeen has one enemy and it is moisture — an open pack in humid weather goes soft within a day or two, and no amount of resealing brings the crunch back. Always use a dry spoon or dry hands, close the container properly after every serving, and if you are opening a large pack, decant a week’s worth into a smaller jar and keep the rest sealed. Refrigeration is not needed.
