A samosa is a folded pastry with a spiced filling, fried until crisp. Ours are made small, to be eaten by the handful as a dry snack, with a dry spice filling instead of a moist one. They sit in our Authentic Banarasi range, in the Fried Snacks family.
Every Indian knows the samosa that is eaten hot at four in the afternoon and is useless by six. The samosi is the other one — smaller, drier, and made to last. It exists because families needed something that could sit in a tin for weeks: put out for unexpected guests, packed into the shaadi ka dabba, carried on a long train journey where nobody was reheating anything. In Banaras the full-sized samosa never really took hold at breakfast — that slot belongs to kachori and sabzi — so the samosi found its place at tea instead, alongside the evening cup. It is not a shrunken samosa. It is a different sweet-shop craft altogether, and the difference lives entirely in the filling.

An ordinary samosa goes soft because wet potato sits against pastry and the moisture has nowhere to go. Ours is filled dry — roasted gram flour and fine sooji worked with coriander, fennel, cumin, ajwain and amchur, cooked out until there is nothing left to weep into the shell. That single decision is why these keep. The pastry is maida rubbed hard with oil until it holds shape in a fist, rested, rolled thin and cut into small rounds; each one is folded into a cone, filled by hand and pinched shut along the seam so nothing escapes in the kadhai. Then a long, slow fry on the lowest flame — the khasta method — which drives out every trace of moisture and gives a shell that shatters rather than bends.

Keep in an airtight tin or jar in a cool, dry place, away from the stove and any steam. These hold their crunch far better than a fresh samosa, but humidity will still soften the shell if the container is left open — close it properly after every serving and always use dry hands. If a few have gone slightly soft in monsoon weather, ten minutes in a low oven brings the crispness back. No refrigeration needed.
