Every Indian knows the samosa that is eaten hot at four in the afternoon and is useless by six. The samosi is the other one — smaller, drier, and made to last. It exists because families needed something that could sit in a tin for weeks: put out for unexpected guests, packed into the shaadi ka dabba, carried on a long train journey where nobody was reheating anything. In Banaras the full-sized samosa never really took hold at breakfast — that slot belongs to kachori and sabzi — so the samosi found its place at tea instead, alongside the evening cup. It is not a shrunken samosa. It is a different sweet-shop craft altogether, and the difference lives entirely in the filling.
