About Aloo Badam Lachha
Lachha means thread, and that is the whole idea — potato cut so fine it fries into something closer to straw than a crisp. It came out of the Bikaner namkeen kitchens and spread across North India as the polite snack, the one put out in a bowl when guests arrive rather than eaten from the packet. In a city like ours it earned a second life. Made with sendha namak and no onion or garlic, lachha is one of the few namkeens that can be eaten on a fasting day, which is why it appears in Kashi households through Navratri, on Ekadashi and right through the Sawan Mondays. Mildly sweet, mildly hot, and impossible to stop at one handful — that balance is the whole point.
