Til belongs to winter in this part of the country. From Khichdi — what the rest of India calls Makar Sankranti — sesame is everywhere in Kashi: in laddoos, in gur chikki, handed out at doorways, thrown into the Ganga at dawn. It is the seed of the cold months, and a suhali pressed with til is simply that instinct applied to the tea tray. Suhali itself is the old wedding-and-festival cracker of the north, fried for Holi and Diwali and then packed into tins because it keeps. Ours takes that base and gives it sesame instead of fenugreek — no bitterness, just a slow toasted nuttiness that builds as you eat. It is the one to reach for with masala chai, or, as our older customers insist, with a spoon of mango pickle.
