Rocher is simply the French word for rock, and it has long described any confection left deliberately craggy on the outside — nut and caramel clustered rather than smoothed, so the surface catches the light. We borrowed the shape, not the recipe. The cashew has been at home in Indian sweets since Portuguese ships brought it to these shores five centuries ago, and a Banarasi halwai has been turning it into barfi for as long as anyone can remember; all we have done is roll that same paste around a whole roasted kaju and give it an edge you can hear. It is the piece we build gift boxes around — substantial enough that one is enough, striking enough that nobody has to be told it cost something.

Three things happen separately and then meet. Whole W240 cashews are dry-roasted until the centre turns biscuit-gold — these become both the hidden core and, once caramelised in sugar and broken up, the crunch on the outside. The middle layer is our kaju barfi paste, ground fresh and cooked to a one-thread syrup, kept a touch softer than usual so it can be moulded rather than rolled flat. Each rocher is then built by hand: a roasted cashew in the palm, the warm paste closed around it, then rolled through the crushed praline until the surface is completely, unevenly coated. No mould is used, which is why no two are quite the same size and why the coating sits in ridges instead of a smooth shell. They are set in paper cups and boxed only once fully firm.

Keep the box closed and upright in a cool, dry place. The caramelised coating is the part that suffers in humidity — left open in damp weather it turns from crisp to chewy within hours, so reseal after every serving. Do not refrigerate; the cold makes the praline sweat and dulls the roast. Leave each piece in its paper cup until served, and finish within the shelf life printed on the pack while the crunch is at its best.
