A live counter needs its own headcount, not the guest count
One halwai comfortably serves 70–90 guests an hour from a jalebi or rabri counter. For a 400-guest wedding, that's not one counter — it's four running staggered shifts. Ask any caterer how many counters they're actually staffing before you book one live jalebi counter and assume it covers the hall.

A box that travels home with a guest needs to hold for 4–5 days without refrigeration; a tray served on-site can be made same-day and doesn't need that buffer. Every Banarasi kitchen — ours included — runs at full capacity that week. Corporate Diwali hampers and wedding season overlap on the calendar. If your event falls in that window, the honest advice is to lock your quantities by early October, not the week before.

If prasad purity matters for your function, ask specifically whether the kitchen runs a segregated slot — don't assume it's implied.
