Suhali is the food of leaving home. Across eastern UP and Bihar it is what gets fried the night before a journey and packed in newspaper for the train, what goes into the tin before Chhath, what a mother sends back with a son returning to the city — because it keeps for weeks and asks for nothing but a cup of tea. The sweet version is the one most shops sell now. Ours is the savoury one, worked with kasuri methi and ajwain, and the fenugreek is not a garnish: it carries a faint, deliberate bitterness that cuts the richness and is exactly why people who grew up on it cannot settle for the plain kind. It is our most reordered namkeen, and the one customers ask us to ship abroad.
