Dodha is sprouted wheat — grain soaked until it germinates, dried and ground — and it is what separates a real doda barfi from the brown-tinted khoya barfi sold under the same name. The sweet belongs to the Malwa belt of Punjab, where it is said to have been worked out in a Sangrur kitchen roughly a century ago and where it is still eaten in winter, in small squares, with a glass of hot milk. It came east with families after Partition and settled comfortably into North Indian sweet shops.
