# Mysore Pak

This one is not ours, and we would rather say so. Mysore Pak was born in the royal kitchens of Mysore in the early twentieth century, where the palace cook is said to have improvised a besan-and-ghee sweet for the Maharaja and, asked what it was called, named it after the city and the paka — the sugar syrup — that made it. It travelled north the way good things do, and by the time we were growing up in Kashi it was already on every festival tray here alongside the peda and the laddoo. There are two schools: the dense fudge-like version, and the porous, honeycombed one that drinks ghee and collapses the moment it meets your tongue. We make the second. It is harder, it uses more ghee, and there is no way to fake it.
