##
About Gond Dryfruit Laddoo

Gond is not an ingredient you go looking for. It is tree gum — hardened sap collected from the babool, sold in small amber crystals at the kirana shop — and it exists in Indian kitchens for one reason: winter. In houses across this belt the gond ka laddoo is made once the mornings turn cold, packed into a steel dabba on a high shelf, and handed out one a day, usually with milk, usually to whoever the family has decided needs looking after — a new mother, a grandfather, a child who has grown thin. Nobody eats three at a sitting. That restraint is part of the sweet; it is made to be rationed, not devoured, and there is a particular kind of care in being handed one.

## How It's Made

Everything turns on how the gond behaves in hot ghee. Dropped in at the right temperature the crystals swell and puff into light white pieces, almost like popcorn; too hot and they brown outside while staying hard in the centre, too cool and they simply sit there and turn to chewy lumps in the finished laddoo. Ours are fried in small handfuls, lifted out the moment they puff, cooled and then crushed coarse — never powdered, because those crunchy pockets are the entire point. Separately, atta is roasted in desi ghee on a low flame until it turns nutty and deep gold. Almond, cashew, pista and magaz are chopped and lightly toasted, sonth and cardamom go in for warmth, and the whole mixture is bound with boora while still warm and rolled by hand before it sets.

## Ingredients

•      Gond (edible acacia gum)

•      Whole wheat atta

•      100% pure desi ghee

•      Boora sugar

•      Almonds, cashews, pistachios and magaz (melon seeds)

•      Sonth (dry ginger) and green cardamom

**Contains:** Wheat (gluten), milk (ghee), almonds, cashews, pistachios. No artificial flavour, colour or preservative. Made in a facility that also processes other tree nuts.

## Storage Instructions

Store in an airtight steel or glass container in a cool, dry place — this is one of the few mithais built to keep, and kept sealed it holds its texture right through the shelf life. Humidity is the only real enemy: moisture softens the puffed gond and the laddoo loses its crunch, so use a dry spoon and close the container properly. Do not refrigerate; the ghee sets hard and makes the laddoo difficult to bite. In winter, if it has firmed up, hold it in your palm for a minute before eating.
