# Balushahi– Traditional Flaky Desi Ghee Mithai

# Balushahi – Traditional Flaky Desi Ghee Mithai

Enjoy the rich taste and delicate layers of Balushahi from Shri Annapurna Sweets, a traditional Indian sweet known for its golden crust, flaky texture, and light sugar-syrup glaze. Made with refined wheat flour, pure desi ghee, curd, and sugar, Balushahi is carefully fried over low heat to develop a crisp exterior and a softer centre.

Finished with fragrant green cardamom and pistachio slivers, this classic mithai is a wonderful choice for festive celebrations, family gatherings, gifting, or enjoying with your evening tea.

## About Balushahi-

If you grew up anywhere between Kanpur and Patna, you met balushahi before you knew its name — in the paper packet handed out after a mundan, in the shaadi ka dabba that arrived a week before the wedding, on the steel plate at every satyanarayan katha. It is the sweet of ordinary ceremony rather than grand occasion, which is exactly why every family has an opinion about it. The South calls it badusha and Bihar knows it as makhan bada; the shape is the same everywhere, a thumb-pressed disc cracked open at the edges. We make ours the way this belt likes it — more flake than syrup, so the crust still gives way with a sound when you bite it.

    ## How It's Made

The secret is the temperature, and it is the one thing nobody rushing an order gets right. Maida is rubbed with plenty of desi ghee and brought together with dahi and the smallest pinch of soda — barely kneaded, because working the dough builds gluten and gluten makes a bread, not a balushahi. It rests, is shaped into discs and pressed once in the centre with a thumb. Then the frying: into ghee that is only just warm, and left there on the lowest possible flame for the better part of half an hour. That long, cool fry is what pushes the layers apart and gives the cracked, flaking crust; fry it hot and you get a smooth brown ball that is raw in the middle. Each one is drained, cooled slightly and turned through one-string cardamom chashni for a few seconds only, so the syrup sets as a thin glaze rather than soaking in.

    ## Storage Instructions

Keep in an airtight container in a cool, dry place. Balushahi holds its texture better than most fried sweets, but humidity is still what softens the crust, so reseal the box after every serving rather than leaving it open on the counter. Do not refrigerate — the cold makes the ghee set and turns the flake leathery. If you want it close to shop-fresh, warm a piece for ten seconds before serving and the layers crisp up again.
